  • The main objective of this study was to determine the polyphenols content and the antioxidant activity of three spontaneous herbs (Borago officinalis, Cichorium intybus L., Sonchus asper L) in relation to the collection sites with different degrees of pollution. In particular, the following determinations on the edible leaf tissue of each sample are been performed: -quali- quantitative evaluation of phenolic compounds of extracts of the three selected species and measurement of antioxidant activity with in vitro test. In particular, the Folin-Ciocalteu method is been used for the determination of total polyphenol content, the HPLC method (High Performance Liquid Chromatographic) for the qualitative and quantitative analysis of polyphenolic components and the free radical synthesis of 1,1-diphenyl-2-picrylhyidrazyl (DPPH.) to quickly make a quantitative valuation of the antioxidants present in the extracts under investigation. In the monitored samples, the presence of polyphenolic compounds was variable within the three different species, but a Iso in relation to the different environmental status of the selected sampling sites: the highest concentration of polyphenols was found in samples harvested in sites believed to be at higher human impact. Simultaneously, the antioxidant activity showed a similar pattern to that of polyphenols2, which confirms that a plant species responds to the environmental stress by developing a major quantity of bioactive substances (literal)
