  • Emulsions play an important role in many industrial processes since they are utilized in several fields, such as pharmaceutical, cosmetic, food and oil recovery. For this reason the study of their stability is a topic of increasingly interest. In the last years, the attention has been focused on the investigation of new systems able to stabilize emulsions, namely mixed systems composed by surfactants and solid particles. In this study a cationic surfactant (CTAB) and silica nanoparticles have been used for the preparation of stable hexane/water emulsions. It is well known the emulsion behaviour depends on the stability of the liquid film between the droplets. Hence, in order to understand how the particle presence acts at the interface, it is important to investigate both the emulsion and the adsorbed interfacial layer structures. Concerning the former aspect, cryo-SEM analysis has been utilized, while the adsorbed monolayer has been characterized by different techniques, such as Shear Rheometry, Ellipsometry, Brewster Angle Microscopy. This study allows us to investigate the structure of the adsorbed interfacial layer in the presence of nanoparticles, which is responsible of the high stability of the corresponding emulsions.
