- The mechanical behaviour of liquid interfaces has a large relevance for many technological and natural processes involving multiphase systems subjected to dynamic conditions. This behaviour is primarily linked to the value of the interfacial tension and to its instantaneous variation under the effect of changes of the available interfacial area, i.e, to the dilational rheology of the interfacial layer. In particular for systems characterised by a high specific area, such as liquid films, emulsions or foams, these aspects may become the main driving force for the system evolution. Moreover, a close link exists between dynamic interfacial tension and the adsorption mechanisms, which, in turns, reflect some molecular characteristics of surfactants and of the transport and kinetic processes involving them. Thus the interpretation of dilational rheology data with the help of suitable models provides a unique opportunity to access basic physicochemical mechanisms concerned with adsorption, deriving quantitative and qualitative information. Here a review of models and experimental methods developed during the last years, for the investigation of surface dilational rheology is given. In addition, applications to surfactants adsorbing with different mechanisms are reported as case studies. Moreover, results are also given concerning the dilational rheology of surfactant-nanoparticle interfacial layers. (literal)
