- The interfacial dilational properties are believed to play an important role in the stabilisation of liquid films and, as a consequence, of emulsions. The definition of the existing correlations is however puzzled by the fact that different parameters influences the dilational properties, such as the area perturbation characteristics and the degree of coverage of the interface. A recent work has addressed the topic for water-in-oil emulsions stabilised by Span80, by comparing the measured dilational visco-elasticity of the liquid-liquid interface, with the features observed for the corresponding emulsion. To this aim it is necessary to get measurements of the dilational visco-elasticity over a wide frequency range of the dilational perturbations, which is made possible by the utilisation of Oscillating Drop methods implemented respectively in Drop Shape and Capillary Pressure tensiometers. In this work this approach is extended to consider adsorption layers at water-oil interface of different water-soluble and oil-soluble surfactants, and the corresponding water-in-oil or oil-in-water emulsions. The emulsification and stability features are compared with the interfacial visco-elasticity of freshly formed interfaces and/or of interfaces at adsorption equilibrium, respectively. Finally results are also reported concerning emulsions stabilised by nanoparticles-surfactant systems. (literal)
